Most of us have seen the mating ritual of birds. Affection is on full display as a male ostrich, swan or peacock will put on his best show to woo the female he desires.

The flamboyant dance involves spreading its colourful feathers, swinging its neck and adding a flirtatious serenade of sounds to the performance. Bill and Coo is a reference to how pigeons express their desire and is the inspiration for one of the most romantic resorts in Mykonos, if not the world, Bill & Coo Suites and Lounge.

There is no other way to describe Bill & Coo Suites and Lounge than romantic and chic. This hideaway for couples is perched high on a rocky cliff with spectacular views of the Aegean Sea. The location is also ideal, only a twenty-minute walk to Mykonos Town and its shopping destinations, outdoor restaurants and of course the nightlife and clubbing scene that Mykonos is famous for. What makes the location so ideal is that it is close but far enough away in a quiet place made for rest, relaxation and romance.

What most will be excited about when they arrive at Bill and Coo is the pool scene, which with its confidence-filled beauty takes its place in our Instagram feeds, or rather, its rightful place.

At any time of the day, the views never cease to enchant, but the ones we can see at dusk, while the Adriatic Sea is a mirror for the dance of sun and darkness, are definitely the most magical. At that moment, the setting of the pool changes almost as if it were a stage show. The layout of deckchairs and sun umbrellas is quickly replaced by a nightlife lounge with couches and low tables intended for couples to indulge in cocktail culture while enjoying the mesmerizing Greek sunset.

The picturesque pool terrace is just one of the hotel's many design features. The whole resort is friendly and ultra-modern, but minimalist in the best way. It's far from high-end luxury decor - instead expect a stark simplicity and uncluttered space that makes guests feel much more relaxed. The elevated level of traditional island decor is raised with natural wood and stone finishes, contemporary furnishings and dramatic lighting.

The beautiful design does not end at the pool and common areas. The 32 suites continue this story in open living spaces that feature white walls, polished concrete floors ready for barefoot, lazy days, and exposed wood and latticed ceilings. Furnishings include extremely comfortable Cocomat beds along with hand-made chestnut furniture. The rooms have a high-tech sound system with playlists connected to iPads. The hotel even provides a free mobile phone for personal use during your stay.

All suites include spacious verandas, private Jacuzzis or private pools overlooking the Aegean Sea and regularly scheduled romantic sunsets. The pool suites offer a pleasant outdoor space with a temperature-controlled pool made for private moments with your loved one. The infinity edge pool is complete with outdoor couches and raised lounge chairs ideal for tanning without the tan lines while taking in panoramic sea views. To complete the space, the outdoor area has a breakfast table in its own room.

The culinary experience at the Bill and Coo Hotel is exceptional with one of the best restaurants on the island. The gastronomic project offers traditional Greek dishes of haute cuisine, while including eight delicious dishes made with fresh and local products and accompanied by wine from their extensive wine cellar.

A rich breakfast is served a la carte with traditional and Mediterranean options, and the offer includes Greek pies and pastries, plates with delicacies, feta cheese and olives, delicious smoothies and fresh juices.

Bill & Coo Suites and Lounge offers a small but high-end spa with a wide range of treatments, from massages to rejuvenating therapies with products from the Swiss brand Valmont. There are individual and couples’ treatments, as well as a sauna, steam room and jacuzzi. For those who want to stay in shape, the hotel offers exercise facilities and an available fitness instructor.

Away from the hotel, everything Mykonos has to offer is on your doorstep. Mykonos Town and its maze of narrow bougainvillea-covered promenades and tourist attractions await just for you, as do the many beach clubs around the island where popping bottles of champagne seems to be a national pastime. Away from the party scene, Mykonos offers plenty of natural activities as well as just exploring by car, long walks in the countryside and overcoming the glitz to explore the island's rich Greek culture.

After all, this is an island known for its sun-drenched beaches with Megali Ammos beach a few minutes' walk from the hotel. Bill and Coo's equally alluring sister hotel, Bill and Coo Coast Suites, offers a must-visit beach destination with complimentary transfers. Located on the sunny stretch of Agios Ioannis Beach, the resort features an exclusive adult-only beachfront Beef Bar restaurant with sun loungers, sand and swimming in the beautiful Aegean Sea.

Bill and Coo is one of the few hotels where everything seems to be going right. The relaxed atmosphere, chic design, great cuisine and a long list of facilities and services make it a precious jewel of luxury hotels on the island. The only problem with the Bill and Coo Hotel is that it is so popular and exclusive and, with their regular guests often booking years in advance, it is a question of whether you will be able to book your holiday at the desired time. The smart traveller makes reservations four months in advance, if not earlier. The chic resort is open from April to October.
